Southwestern Twice Baked Potatoes! They're my own invention...

Bake potatoes fully (I do enough potatoes to fit, cut in half lengthwise, on my round pizza stone), and scoop out the guts into a mixing bowl. I add ham bits (you can buy pre-diced ham for salads or use bits leftover from holiday ham), a stick-ish of butter, a cup of sour cream OR ranch dressing, about two-three cups of cheddar OR colby jack cheese, chives if you used sour cream, and I use Chipotle Tabasco sauce (it's not really spicy, since I'm not into spicy, just savory with a tiny kick) to taste...the mixture should be orange. Once that's all mixed well, put it back into the potato skin shells and re-bake them at 350F until heated through.

They're absolutely DIVINE.
