They're my ...Southwestern Twice Baked Potatoes! They're my own invention...<br /><br />Bake potatoes fully (I do enough potatoes to fit, cut in half lengthwise, on my round pizza stone), and scoop out the guts into a mixing bowl. I add ham bits (you can buy pre-diced ham for salads or use bits leftover from holiday ham), a stick-ish of butter, a cup of sour cream OR ranch dressing, about two-three cups of cheddar OR colby jack cheese, chives if you used sour cream, and I use Chipotle Tabasco sauce (it's not really spicy, since I'm not into spicy, just savory with a tiny kick) to taste...the mixture should be orange. Once that's all mixed well, put it back into the potato skin shells and re-bake them at 350F until heated through.<br /><br />They're absolutely DIVINE.Emmahttps://www.blogger.com/profile/08563154977078187669noreply@blogger.com
